Uses: Potassium Sorbate is used mainly as a food preservative. It is also used for personal care products and for food and wine. It has anti-microbial and anti-fungal properties and inhibits yeasts and molds in a variety of foods including yogurt, dried meats, wine, baked goods, cheese and apple cider. It is also contained in many dried fruit items and in herbal dietary supplements. This is to prevent the growth of microbes and mold which increases the shelf life. It is used in amounts from which there are no adverse effects on the health of a person. It can also be used as a replacement in personal care products for parabens. It is the most used food grade preservative but can only inhibit mold, fungi and yeast and is not effective against bacterial growth.
When added to wine, Potassium Sorbate produces sorbic acid. When the active fermentation in the wine has ceased and the wine is racked for the last time after it has been cleared, potassium sorbate will stop any yeast that survives from multiplying.
Odor: Mild odor
Natural: Potassium Sorbate naturally occurs in the mountain laurel ash. The berries from this plant was a traditional preservative in food. Currently it is a synthesized product from the gas ketene. When dissolved in water Potassium Sorbate forms sorbic acid. Potassium Sorbate is the potassium salt of sorbic acid. Up to pH 6.5 this preservative is effective but becomes more effective as the pH decreases and the product is more acidic. Use twice as much acid as you are using Potassium Sorbate in the final product.
Shelf Life: 6-8 months and is about half-strength after a year.
Storage Directions: Potassium Sorbate should be stored in a dry, cool, dark. Store in a sealable container or re-closeable container as to prevent moisture absorption.
Cautions: Powdered Potassium Sorbate can form explosive dust air mixtures. Can be a skin, eye and respiratory irritant. If it comes into contact with skin, eyes or if inhaled and breathing becomes difficult, get medical attention. Store away from beverages and food.
